You want an easy lunch that’s healthy and filling, right? Look no further than this zesty (and simple) chickpea salad, bursting with fresh dill, lemon, celery, onions, cilantro and tomatoes. It throws together in less than 10 minutes, and you can even make a batch ahead of time to have a few days’ worth of meals ready when hunger strikes.
- 15-ounce can of chickpeas, rinsed and drained
- ½ lemon (more to taste)
- 2 stalks celery, chopped
- 2 tablespoons fresh dill
- 1 large tomato, chopped
- ½ onion, chopped
- Cilantro, to taste
- Sea salt and pepper, to taste
- Feta Cheese to top (optional)
- Mix all ingredients together in a bowl. Add additional lemon, salt & pepper to taste.
